This kale and Brussels sprout salad is loaded with dried cranberries, crunchy almonds and pecorino, all tossed in a tangy homemade dressing. It’s fresh, flavorful and perfect for Thanksgiving or any holiday table.

I love having at least one really fresh salad on the Thanksgiving table, especially when the rest of the meal is rich and cozy. This kale and Brussels sprout salad is one I come back to because it has so much texture and flavor in every bite.

The kale and shredded Brussels sprouts hold up beautifully under the dressing, while dried cranberries add sweetness, almonds bring the crunch and pecorino gives it that salty, savory finish. The marinated onions are such a simple addition, but they really pull everything together.

It’s festive enough for Thanksgiving or Christmas, but definitely not limited to the holidays. I’d happily serve it alongside my healthy sweet potato casserole or green bean casserole, and leftovers hold up surprisingly well for lunch the next day.

Why I Love This Kale and Brussels Sprout Salad

  • Perfect for making ahead: Kale and Brussels sprouts are sturdy enough to sit in the dressing without immediately getting soggy, which is exactly what you want when you’re prepping a big holiday meal.
  • Every bite has something different: Chewy cranberries, crunchy toasted almonds, salty pecorino, and a little heat from the red pepper flakes. It never gets boring the way a plain green salad does.
  • It feeds a crowd: The recipe makes eight servings as written and doubles easily, which is why it works for Thanksgiving, Christmas, potlucks, and cookouts alike.

  • kale – Lacinato kale, also called dinosaur or Tuscan kale, is my preference here. The leaves are flatter and less frilly than curly kale, which makes them much easier to slice thin. Curly kale works if that is what your store carries.
  • Brussels sprouts – look for firm, tightly closed sprouts with no yellowing on the outer leaves. Loose or soft ones are past their prime and will taste noticeably more bitter raw.
  • lemon juice – freshly squeezed, and this is what you massage into the greens. The acid is what breaks down the tough fibers and takes the bitter edge off.
  • garlic – fresh cloves muddled with the salt and pepper before they go into the dressing. Muddling releases far more flavor than mincing alone.
  • olive oil – the base of the dressing. Use a good one since there are so few ingredients in it.
  • balsamic vinegar – brings a tangy sweetness that balances the peppery greens.
  • yellow onion – slice it as thin as you possibly can. Thick slices will not mellow the same way in the dressing and you will taste them.
  • dried cranberries – they add a chewy, tart sweetness that keeps every bite from tasting the same.
  • pecorino romano – sharper and saltier than parmesan, which is why I reach for it here. Grate it fresh rather than buying pre-grated, since the pre-grated stuff is coated to prevent clumping and does not melt into the salad the same way.
  • almonds – toasted, and they bring the crunch that makes this salad feel finished.

Substitutions

  • Cheese options: For a dairy-free option, try my vegan parmesan cheese, made with hemp seeds! Or, add nutritional yeast for that cheesy flavor. You could also just skip the cheese all together and this salad is still amazing.
  • Make it nut-free: Skip the almonds or swap in toasted sunflower seeds or pepitas. You still get the crunch.
  • Change the dried fruit: Dried cherries, raisins, or chopped dried apricots all work. Pomegranate arils are a great fresh option if you have them, and they add a nice pop of color for the holidays.
  • Swap the greens: If Brussels sprouts aren’t available, shredded broccoli or broccoli slaw are the easiest swaps because they have a similar crunch and hold up well in the dressing. You could also use shredded cabbage for a slightly different texture.

How to Make a Kale and Brussels Sprout Salad

Step 1: Toast the almonds on a baking sheet at 350°F for about 8 minutes total, stirring halfway, until golden. Set aside to cool.

Step 2: Muddle the garlic with the salt and pepper, then add to a jar with the olive oil, balsamic vinegar, and thinly sliced onion. Shake and set aside to marinate.

Step 3: Shred the Brussels sprouts and kale as thinly as possible, either in a food processor with the slicing blade or by hand.

Step 4: Pour the lemon juice over the greens, add a pinch of salt, and massage with your hands until the kale softens.

Step 5: Add the cranberries, red pepper flakes, and nutmeg, then pour the dressing over and stir. Add the cheese, stir again, and top with the toasted almonds.

Brittany’s Tips

  • Shred everything really thin: This makes a huge difference with raw Brussels sprouts. I like using the slicing attachment on my food processor, but a sharp knife works too. The thinner they are, the better they soak up the dressing.
  • Don’t skip massaging the kale: A quick massage with lemon juice and salt softens the kale and takes away some of its bitterness. You don’t need to go crazy, just massage until it starts to feel more tender.
  • Let the onions marinate: I like making the dressing first so the sliced onion can hang out in the balsamic mixture while I prep everything else. It mellows the onion and gives it so much more flavor.
  • Add the almonds last: Toast them for extra flavor, then sprinkle them over the salad toward the end so you still get that nice crunch.

What to Serve With Brussels Sprouts and Kale Salad

This salad is the perfect side dish for a holiday dinner with ham, or turkey. It would also be a great vegetarian side for a weeknight meal! Or you could double the recipe and bring it to a cookout or potluck. Here are some pairing ideas:

Storage and Make Ahead Tips

This salad will keep for 2-3 days in an airtight container in the fridge. To make the salad in advance, you can prepare it fully and keep it in the fridge up to 24 hours. I’ve found that it keeps well, even with dressing.

That said, for ultimate freshness it’s probably best to prep the almonds, shredded kale/sprouts and the dressing and keep them in separate airtight containers. Store the kale and sprouts and the dressing in the fridge and the almonds at room temp. You can do this prep work up to 24 hours in advance.

Massage the kale before adding the dressing. Just sprinkle on a little lemon juice or salt, then massage it with your hands until the leaves start to soften. This simple step makes the kale tender and less bitter—definitely worth it!

Can you eat Brussels sprouts raw in a salad?

Yep, raw Brussels sprouts are totally fair game! Shredding them helps them soak up the dressing, so they soften just a bit and blend right in with the kale.

Can I use a different type of kale?

Absolutely! I like using Lacinato (dinosaur) kale for this, but curly kale works just as well. Whichever type you choose, give it a good massage to make it tender and extra tasty.

Shredded Kale and Brussels Sprout Salad

Ingredients  

  • 4 cloves of garlic, minced
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt
  • ¼ cup olive oil
  • 2 Tablespoons Balsamic vinegar
  • 1 yellow onion, super thinly sliced
  • 1 large bunch of Lacinato kale, washed and de-stemmed
  • 1 lb brussels sprouts
  • juice of 2 lemons
  • cup dried cranberries
  • ¼ teaspoon red pepper flakes
  • pinch of nutmeg
  • ¾ cup finely grated Pecorino Romano cheese, fresh Parmesan will work too
  • ¼ cup almonds, sliced or chopped

Instructions 

  • Preheat oven to 350°F. Add almonds to a baking sheet and place in oven to toast. Stir almonds after 5 minutes. Allow to toast about 3-4 minutes longer or until the almonds are golden. Remove from oven and allow almonds to cool.

  • Meanwhile, toss together the ingredients for the dressing by muddling together the minced garlic with sea salt and black pepper using a mortar and pestle. Place muddled garlic and spices into a mason jar with olive oil, balsamic and thinly sliced onion. Shake to combine and let marinate.

  • In a food processor fitted with a slicing blade, shred the Brussels sprout. Next, shred the kale. (If you don’t have a food processor, you can chop the kale and Brussels sprout by hand. Just make sure to slice them very thin.) Place in a large bowl.

  • Pour the lemon juice over the kale and Brussels sprout mixture, sprinkle on a little sea salt and massage with clean hands. Once the kale mixture is massaged, add cranberries, red pepper flakes and nutmeg to the bowl. Pour the dressing over the salad mixture and give it a good stir. Add cheese and stir again. Top with toasted almonds.

  • Enjoy right away or let sit for a bit in the fridge to marinate before serving.

    This is FANTASTIC!!! The only change I made was using 1/2 of a large red onion instead of a white one, because reds sit a little better in my stomach. But otherwise followed, followed the recipe exactly, and plan to make again soon and often!!!

    Bloody gorgeous and SO easy! I have swapped the brussel sprouts for broccoli until the sprouts are in easy. And, I don’ chuck everything in (e.g. nutmeg) but the core elements of the recipe are included, plus a little grilled chicken for protein and boy, what a tasty dish!
